Lavender cupcakes They are fresh and fun and delicious and beautiful. I have wanted to make these cupcakes for. The lavender in these cupcakes is understated yet elegant and thoroughly unique. You can have Lavender cupcakes using 15 ingredients and 7 steps. Here is how you cook that.

Ingredients of Lavender cupcakes

  1. You need of Icing.
  2. Prepare 12 of lavender heads with short stalks.
  3. You need of Milk.
  4. It's 145 ml of milk (I used standard).
  5. You need 15 of fresh lavender heads.
  6. Prepare of Cupcake.
  7. You need 120 g of flour.
  8. Prepare 140 g of white sugar.
  9. It's 2 tsp of baking powder.
  10. You need 50 g of margarine (I used canola oil margarine).
  11. You need 1 of egg.
  12. You need 25 ml of infused milk.
  13. It's 250 g of icing sugar.
  14. Prepare 90 g of margarine.
  15. It's of Few drops of purple food colouring.

If the frosting part of the recipe does not appeal to you, you may substitute your favorite buttercream frosting instead. If you have not yet tried lavender cupcakes now is the time. I was hesitant to try these myself I just created a basic yellow cupcake and blended in some honey, lavender and whole milk to compliment. Because guys: these earl grey lavender cupcakes are so. freaking. good.

Lavender cupcakes step by step

  1. Put the lavender and the milk in a bowl or jug, cover it and put it in the fridge for at least 3 hours. It worked well for me when I left it in overnight..
  2. Preheat oven to 180°c. Prepare 12 cupcake casings..
  3. Mix together the flour, baking powder, sugar and margarine until it has a sandy feel. It's easier to use an electric whisk for this (try not to get stuff everywhere)..
  4. Take the lavender heads out of the milk and gradually add 120ml of it into the flour mixture. Beat until mixed, add the egg and beat it well..
  5. Spoon the mixture into the casings as evenly as possible and bake for about 25 minutes or until a skewer comes out clean..
  6. Icing time! Beat (I used the trusty electric whisk here, can't imagine doing this by hand) the icing sugar, margarine and food colouring until combined. Add the rest of the lavender milk and slowly mix in. Beat it up again quickly until it's very fluffy, 5-10 minutes. It is nice to add some of the lavender petals to the icing for random hits of flavour..
  7. When your cupcakes are cold, ice them with the icing and decorate them with stalked lavender heads!.
